And the December Vegan Iron Chef Secret Ingredient is…
…MINT!
In any variety.
I love mint. Always have, always will. But sadly, all I have that is minty on hand is a. gum (which is obviously something not to bake/cook with) and b. creme de menthe extract. So I used that. And since it is the holiday time of year, I thought I’d make a yummy Christmas cookie.
So original, I know (damn, I wish I had some fresh mint…)
But here’s a good little recipe based off Mum’s Pinwheels.
Chocolate Mint Cookies
Yields: 22 cookies
Ingredients:
• 1 stick vegan margarine (1/2 cup)
• 1/2 cup white sugar
• 1 1/2 tsp ener-g egg replacer mixed with 2 tbs warm water
• 1 tbs nondairy milk
• 1 tsp vanilla extract
• 1 1/4 cup plus 2 tbs all purpose flour
• 1 tsp baking soda
• 1 tsp baking powder
• salt
To the chocolate dough:
- 1 tbs cocoa powder
- 1/2 tsp chocolate extract (optional)
To the mint dough:
- 1 tbs flour
- 1 tsp creme de menthe (or other mint) extract
- (optional) green food colouring
Directions:
Preheat your oven to 375F and have ready an ungreased cookie sheet.
Cream together the margarine and sugar, then adding in the egg replacer, milk and vanilla. Beat in the flour, baking soda, baking powder, and salt. Remove half of the dough and transfer to another bowl.
To one bowl add in the ingredients for the chocolate half.
To the other bowl, add the ingredients for the mint,
Add a pinch of flour to a flat surface, and roll out your chocolate dough into roughly a 8×4 rectangle. Roll your dough into about an 8″ log shape, and place along the middle of the chocolate dough, Fold the sides of the chocolate dough over the mint dough, making it look like a long chocolate cookie log with a mint middle. At this point you could wrap it in plastic wrap and stick it in the deep freeze. OR slice into 24 cookies (I just discard the two end nubs), arrange on your cookie sheet and bake for 9 minutes. Allow the cookies to cool on the cookie sheet for 5-10 minutes before transferring to a cooling rack.

Speaking of Mumbai, perhaps I should work on my research paper. That’s due next Friday. What do you all think...is it lazy to take the weekend off from doing homework? I mean…I’m half done with my essay at any rate. I deserve time off…right? 0_o
