So let’s just pretend it’s Wednesday…

So yesterday I had full intentions of posting what I ate, jumping on the WIAW (What I Ate Wednesday) bandwagon, but got bogged down with reading and gave up any blogging ambition. And as such, I decided to just post this morning what I had yesterday. You know what I realize? My diet is pretty damned repetitive. I had the same thing like…three times throughout the day. Oh well. I guess that’s sort of the point of this whole WIAW thing, right? Eating a variety of yummy, healthy food? I should get on that. I mean, I did eat like 150 more calories yesterday than I normally do. I ought to think about changing up where those calories are coming from:

 

 

 

 

Wellness Weekend Post

Breakfast: Breakfast constituted of two parts. I had originally intended just to have 2/3 cup of my Curiouser and Curiouser soup, but was hungry after that so I had a cup of my “Spooky” Salad too. Which made me feel unbelievably gluttonous because I hate feeling like I have eaten more than I “should.” (oh damn that objective ‘should’). Oh, and of course I got my usual grande coffee from Starbucks at campus. No pic…sorry.

Lunch: For lunch I had another cup of my salad.

Snack: …and yet another cup of salad when I got back to my apartment around 4 o clock, with the rest of my soup to go with. I think I also ended up having a half of a low carb whole wheat tortilla with some orange marmalade, but that’s not worth taking a picture of.

Later snack: To revive myself after finishing my Hindi I decided to have some maple tofu pudding.

“Dinner?”: Okay, so I never usually really eat a “meal” at night (or any time of day for that matter…). But around 8 o clock I had a dish of garlic-y kale and roasted kabocha squash. Yums.

Last snack: I snack a lot. But I was still a touch hungry so I decided to have my other half of a tortilla, a slice of 35 calorie whole wheat bread (store bought, probably not the healthiest of things, but it was dry and tasted okay with marmalade), a bowl of steamed broccoli with garlic and malt vinegar and this. Pumpkin tofu mousse. Totally TOTALLY delicious.

Pumpkin Tofu Mousse

Serves 1

Ingredients:

Directions:

Puree until very very smooth, scraping the sides of your processor as necessary to get any tofu bits.

So what’s your opinion…do I eat too much? Not enough? Just enough? Most days, I eat at least a little more varied diet, but I was busy and lazy yesterday and just ate what I had on hand. I’ll post later today my more “varied” list of eats.

And I can’t wait to eat this. I made it last night since I’m out of my other soup, but didn’t have any yet (well, just to taste it, but I not a bowlful yet…)

Spiced Butternut Bisque

Yields: 4 cups

Ingredients:

  • 2 cups peeled and cubed butternut squash
  • 2 cups chopped cauliflower
  • 1 cup chopped carrots
  • 3-4 cups water (I used 3.5 – adjust the amount to how thick you want your soup)
  • 3 packets of stevia extract in the raw or 1 tbs sweetener
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp cardamom powder
  • 1/8 tsp garam masala
  • a pinch of salt

Directions:

Boil your chopped vegetables in the water over medium heat until very tender. Then transfer everything to a food processor along with the spices and puree until very smooth. Taste for seasonings, and enjoy!

That’s all for right now. I should take a quick look over my notes for my ethics exam today (not that I don’t already know the information). More to come later, loves! But really…do you all think I eat too much? I feel like I do.

  1. No way you eat too much. Each person is different and if you’re hungry, eat. Besides, food tastes good and you deserve it. Especially if you’re only using those tiny bowls.

    • Thank you for the supportive words :) Part of my rational mind is telling me that I eat nowhere near enough calories in a day (quite a bit below 1000), but my irrational disordered thoughts like to take over…curses! But again, thank you.

      Oh, I was looking at your blog posts…do you happen to have a recipe for that tasty looking honeycomb ice cream? :D

      • Objectively you are probably not eating enough to maintain weight, this was a very low protein day, and although there is a tiny bit of fat adding some will help your body to absorb the fat soluable vitamins in all your veggies.

  3. Of course so much depends on one’s size and build and activity levels, but seems to me you certainly don’t eat too much. What you present here would definitely constitute a weight loss diet for me . . .and I’m not exceptionally physically active. The mousse looks great! :D Thanks for submitting to WW this week. :)
